Greek Salad

Greek salad

2 cups cooked brown rice
6 cups chopped spinach
1 red pepper
1/4 cup chopped red onion
1 cup black olives
1 cup feta cheese
1 diced cucumber

Dressing

1/4 cup feta cheese
1/4 cup brine from feta cheese or 1/4 cup water
1 cup grape seed oil or olive oil
1 tsp basil
1 tsp dill weed
1 tsp greek seasoning
1 crushed garlic clove
Blend well.
Add 1/2 cup or to taste to salad and enjoy!
